Based in Bolzano, The Consorzio Tutela Speck Alto Adige IGP promotes and ensures quality control for each ham of Speck Alto Adige IGP. The Consorzio makes certain that the production process of each piece of Speck Alto Adige IGP complies with traditional methods. Speck Alto Adige carries the IGP seal, Indicazione Geografica Protetta (Protected Geographical Indication) assigned by the European Union that guarantees quality and authenticity. The Consorzio protects the mark of the IGP ensuring that only Speck Alto Adige IGP that exceeds the Consorzio's guidelines bears the name "Speck Alto Adige IGP" or "Sudtirol Speck GGA." Consorzio Tutela Formaggio Asiago

The Consorzio Tutela Formaggio Asiago DOP was established in 1979 to control the quality of Asiago cheeses and to ensure the correct use of brands, markings and seals and to develop awareness for the cheese both in Italy and abroad. The regulatory board now represents over fifty cheese makers and cheese-seasoning workshops. The Consorzio Tutela Formaggio Asiago has implemented and maintains a Quality Management System which fulfils the requirements of the standard UNI EN ISO 9001:2000. The seal of the D.O.P. branded on each wheel of authentic Asiago cheese represents the Denominazione di origine protetta, or Protected Designation of Origin, that all Asiago cheese is produced within. This area includes the provinces of Vicenza and Trento and parts of Treviso and Padua, located along the Asiago plateau and the upper Po Valley.
